Breakfast Scone Sandwich |
Ingredients:
- 225g self raising flour
- pinch of salt
- 55g butter
- 10g caster sugar
- 2tbsp coriander, finely chopped plus Extra rocket/arugula for garnish
- 2tbsp grated mature cheddar
- 150ml milk, plus extra to glaze
- 4 eggs
- 1tbsp olive oil
- 1 avocados, sliced
- 1 red chili, finely chopped (deseeded)
- 1 lime, juice
- salt and pepper
Directions:
- Preheat oven to 220C. Mix salt and flour, rub in butter. Stir in sugar and milk, add chives and cheddar, bringing together to a dough and knead gently.
- Pat out onto a lightly floured surface and stamp out scones. Place on a lined baking tray, brush with extra milk and bake 12-15 minutes or until golden.
- In a pan over medium heat, add the olive oil. Once hot, crack in the eggs and fry for 4-5 minutes until the white is cooked and the yolk is warm.
- Slice the scone in half, top with the fried egg, avocado slices, garnish with extra coriander leaves and chilis.
